Roasted spare ribs(6 servings)Ingredients:1.5 kg spare ribs1/2 cup chopped shallots1 tablespoon pork fat1/4 teaspoon garlic powder1 cup water1/4 cup lemon juice2 tablespoons tarragon vinegar1 tablespoon worcestersauce2 cups tomato juice3 tablespoons sweet soy sauce1/4 teaspoon paprika powder(1 tablespoon sherry)

How to prepare:Preheat the oven to 225°C/440°F.Put the spare ribs in a large pan, cover with parchment paper and roast 15 minutes in the oven.Brown the chopped onions in the pork fat, add garlic powder and cook another minute. Add the remaining ingredients and simmer 25 minutes. Put the sauce aside.Remove the greased paper from the spare ribs.Reduce the oven heat to 175°C/350°F, pour the sauce over the spare ribs and roast the spare ribs 1 hour. Sprinkle the spare ribs with the sauce regular.
