New year doughnuts
(Dutch oliebollen/oil balls)
100-125 gr
currants
100-125 gr
raisins
4 dl
milk
(1 teaspoon sugar)
500 gr flour

2-3 teaspoons salt
1 egg
optional:
50 gr
candied lemon
1 reinette apple
extra:
oil to fry

Preparation in advance:
Soak the raisins and currants an hour (better overnight) in water (or rum).
Mix the lukewarm milk with the yeast (and sugar). Let rest for 10 minutes.
Sift the salt with flour in a large bowl. Make a hole in the middle and add the egg and yeast mixture. Beat with a mixer a few minutes
very well:
the batter must fall in pieces off the whisks. Stir the drained raisins and currants (and optional chopped apple and/or candied lemon) into the batter. Let
(covered) rise 1 hour at a warm spot

How to prepare:
Heat the oil. Slide, using an icecream spoon or 2 greased spoons, the batter in the oil. Turn the old years fritters after 3 minutes and fry another 2-3 minutes. Make about 5-8 oil balls at the same time, they must have room to turn themselves.
Drain on kitchen paper and serve with icing sugar
