Prawn toastIngredients:500 gr raw shrimps8 spring onions(1 stem lemon grass)2 garlic cloves1 egg white1 tablespoon oil1 tablespoon fresh coriander1 tablespoon fish sauce2 teaspoons chili sauce1 teaspoon lemon juice8 slices old breadsesame seedsextra:oil for frying

How to prepare:Mince the peeled shrimps, chopped spring onion, lemon grass, pressed garlic, egg white, oil, chopped coriander leaves, sauces and lemon juice in a kitchen machine to a homogenous mass.Spread crustless bread thick with the shrimp mixture, sprinkle with some sesame seeds and cut each slice in 4 triangles (and place in the freezer).Heat 1-2 cm oil in a pan and fry the shrimp toast 2-3 minutes with the shrimp mixture down. Turn and fry the other side in 1 minute golden brown and crisp.Drain on kitchen paper .Serve hot.
