Potato pancakes
500 gr
potatoes
1 large onion
2 eggs
2 tablespoons flour
salt
pepper
oil for frying

How to prepare:
Put the chopped onion, beaten eggs and the flour in a large bowl.
Peel the potatoes, grater roughly and add to the mixture in the bowl.
Season with salt and pepper. Stir well.
Heat the oil in a heavy frying pan.
Put 1 large tablespoon of the mixture in the pan and smooth it with the back of a spoon to a pancake of ø 6 cm. Fry the pancakes over medium heat in 3-4 minutes
golden brown. Make 4 or 5 pancakes at the same time.
Turn with a spatula and fry 3 minutes on the other side.
Don't let the pan get too hot to prevent the pancakes to burn.
Keep the pancakes warm in a baking oven (120°C/250°F) while you fry the rest of the pancakes.
Serve the pancakes as a snack or as part of a meal.
