Fast tomato salsaIngredients:1 medium tomato1 (spring) onion1 garlic clove2 teaspoons parsley1 teaspoon red wine vinegar

How to prepare:Peel the tomato and chop the pulp. Mix with the chopped (spring) onion, squeezed garlic clove, chopped fresh parsley and wine vinegar.Let rest for at least an hour, to let the flavours combine.
Also delicious as dipping for a Mexican taco.
