How to prepare:
Wash the rice in cold water till the water keeps clean and drain well.
Bring the rice with the water in a pan to a boil, lower the heat and let without cover simmer for about 4-5 minutes till all water has been taken.
Put the cover on the pan. Lower the heat and let the rice simmer for another 4-5 minutes.
Remove the pan from the heat and let (covered) cool for 10 minutes.
Stir vinegar, sugar and salt with a wooden spoon well into the rice till the rice is completely cold.
Cut the fish in thin strips.Cut the cucumber in strips of 5 cm long.
Put a sheet nori on baking paper or a bamboo sushi mat.
Divide a quarter of the rice over the nori starting at a long side, leave on the other long side an edge of
3 cm free.
Put a little wasabi on the middle of the rice. Divide a quarter of the fish, cucumber and ginger or vegetables over the rice.
Roll the nori with aid of the paper or sushi mat firm from the stuffing-side and push the nori-ends on to each other.
Repeat with the rest of the ingredients. Let firm in the fridge.
Cut with a sharp knife the rolls in slices of 2.5 cm.
Serve the sushi with some soy sauce and wasabi.
