Apple fritters (Dutch appelflappen)
4 dl
lukewarm milk
1 teaspoon dry yeast
(1 teaspoon sugar)
250 gr flour

pinch salt
5-8 reinette apples
(or 4 reinette apples and 4 bananas)
cinnamon
extra:
oil for frying
also delicious with:
banana, pear or pineapple

Preparation in advance:
Mix the yeast (and sugar) with the lukewarm milk and let rest for 10 minutes.
Sift the flour in a bowl. Add the yeast mixture and stir well. Let rise for about an hour on a warm spot (30°C) and sprinkle the salt over. Stir carefull.
How to prepare:
Heat the oil to ± 180°C/360°F. Peel the apples (shortly before frying to prevent from getting brown) and remove the core with an apple corer. Cut the apples in 1 cm thick slices so
you get a hole in the middle and sprinkle with little cinnamon
. Dip the apple slices
completely in the batter, drain a little and fry the apple fritters golden brown
.
Drain on kitchen paper.
Serve with icing sugar

If you're making oldyears eve fritters too, make them first: by baking lots of apple fritters the oil will get very dirty.
